Oven Roasted Vegetables

6 large carrots (cut into chunks)
4 red potatoes (unpeeled)
1 onion (quartered)
1 sweet red pepper sliced
1 sweet yellow pepper sliced
olive oil
salt
pepper
thyme
garlic powder

Coat a large roasting pan with olive oil.  Add all the vegetables to the pan and toss in oil.  Season to taste and toss again.  

Bake at 375 for 45-55 minutes

Zucchini Patties 
2 medium zucchini - grated
1 medium carrot - grated
3 eggs - beaten
1/2 cup whole wheat flour
1 tsp. Italian herbs
1 Tbsp. parmesan cheese
1 clove garlic - minced
salt
pepper

Mix all ingredients with hands.  Form into patties and fry in a buttered or oiled skillet.  Enjoy with applesauce!
